Mixed Mushrooms and Spinach on Pasta
Ingredients:
2 tbs. olive oil
1 onion
1 tsp. thyme
1/2 cup red wine
250 grams mixed mushrooms
150 grams fresh spinach
salt and pepper
150-200 grams pasta
1 tbs. nut oil (walnut or peanut)
Directions:
Preheat the oven to 375 F (or 200 C)
Cut the onion in thin rings.
Saute the onion in 1 tablespoon of olive oil until glassy.
Add the thyme and 1/2 of the red wine and allow this to simmer for 5 minutes.
Remove from the heat and allow to cool.
Clean the mushrooms and cut them in thin slices.
Wash the spinach well, dry it well ( in a salad spinner) and cut the leaves in thin slices.
Saute the mushrooms in 1 tablespoon of olive oil until they are soft.
Add the spinach and saute for 2 minutes until the spinach is wilted.
Add the rest of the wine and allow all to gently simmer for 1 minute.
Season to taste with salt and pepper.
Meanwhile, cook the pasta according to instructions.
Drain the pasta and place in an oven proof baking dish.
Layer the spinach mushroom mixture over the pasta.
Over the top of the spinach mixture, layer the onion, wine mixture and sprinkle a bit of nut oil over the top.
Bake for 5 minutes in a preheated oven at 375 F (200 C).

Vegetarian Recipes for Athletes

Generally athletes need more carbs and protein in their diet. This website has great recipes for those who choose to go meatless!

 Wow, so many good things to try, even for you meat-eating athletes! Butternut squash risotto! Eggplant and spinach lasagna! It’s almost more excitment than one vegetarian athlete can handle.

I got done at the gym at 4 - that weird time between lunch and dinner where you’re kind of hungry, but not hungry enough for a full meal. So I’m at the grocery store, and I come upon this vegan tofu blueberry knish. Sounds crazy, right? I mean, honestly, I don’t even know what a knish is (now I do!), but I wanted to break out of my standard snack rut and try something outrageous. Although a touch higher in calories than I would like, otherwise, this fit the bill perfectly. The name of the company really sealed the deal - Kisses Knishes. LOVE IT. I heated it up in the microwave for a minute and a half and ate what amounted to a blueberry muffin. It was good! If only I’d had some maple syrup and butter…but now that’s getting a little too crazy, even for me.

Being veg does not necessarily mean you’re healthy.
Many people who transition to an animal-free diet automatically go out and buy every meat and cheese substitute they can find, without giving the label or ingredients a second thought. We shouldn’t be trying to imitate meat, we should instead be giving our body the fuel it needs by eating a whole food plant-based diet. 
Learn to love fruits and veggies, whole grains, beans & lentils, nuts & seeds!
Ditch the processed foods, sugar, junk food, and fast food.


The same goes for organic - just because it’s labeled as such does not mean it is healthy. An organic cookie, is still a cookie! And a vegetarian frozen dinner, is still a boxed up, processed, frozen meal, just without the frozen meat!
Now listen, frozen meals and junk food are fine from time to time. Just don’t use the organic or vegetarian labels to think that it’s okay to eat them all of the time. Goodness knows I couldn’t live without some frozen mac and cheese once in a while (with ketchup, of course ;).
